Simple Tomato Bruschetta

This is an incredibly simple summer appetizer to make when ripe tomatoes and basil are in season.  It is quick to assemble, using just 5 ingredients plus salt and pepper!

This recipe uses fresh tomatoes, fresh basil, garlic and a crusty loaf of French bread.

I dice the tomatoes, roll up the basil leaves and cut in a chiffonade (cut crosswise in fine ribbons).

Combine these in a bowl with salt and pepper to taste.  

Then cutting the French loaf on the bias, I brush them lightly with olive oil and toast these slices quickly under the broiler…or can be grilled lightly until golden brown.  Once toasted I take a garlic clove and rub  each slice on the top side to bring out flavor of the garlic.

Then simply top with the tomato mixture when ready to eat!

I recommend keeping the tomato mixture on the side until ready to serve and eat.  Store tomatoes separate from the bread slices…if there are any leftovers!

Simple Tomato Bruschetta

Crusty French Bread toasted and rubbed with garlic, topped with chopped tomatoes and basil.

Ingredients

  • 4 medium Fresh Tomatoes
  • 1/2 cup Fresh Basil Leaves
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 loaf French Bread
  • 2 tbsp olive oil
  • 1-2 cloves fresh garlic

Instructions

  • Dice Tomatoes. Roll and slice basil leaves into fine ribbons (chiffonade) and combine in bowl with tomatoes, salt and pepper. Set aside.
  • Cut French bread on the bias to make long half inch thick slices and arrange on baking sheet. Brush lightly with olive oil on both sides. Place under 375 degree F broiler and toast until golden brown on both sides, being careful not to overcook. Turn half way through. Approx 2-3 minutes per side.
  • When bread is slightly cooled rub one side with a fresh garlic clove. Spoon fresh tomato mixture onto each slice and serve.
